Fall is such a bittersweet time of year. It's beautiful and full of magic, and yet I always feel a bit sad as summer comes to a close. This fall season has been especially bittersweet, as life has offered me both tragedy and celebration. So I did what I always do when I need to make sense of things- climb a mountain. On Saturday I did the Castle Peak and Conundrum Peak combo near Aspen, Co. This will have been my 3rd class 3 climb this summer, and I have to admit that I'm loving the challenge. There's already some snow near summit which made the exposed sections a bit hairy. Thankfully the weather was perfect which allowed us to take our time through the sections of wet and loose rock. The neon aspens on the way up were absolutely outrageous, and the views from summit were equally as stunning.
Speaking of fall, it's time for all things pumpkin. I've been experimenting in the kitchen already, and I've got a few ideas coming your way. The first is a smoothie that tastes like pumpkin pie in a cup!
Pumpkin Pie Smoothie
Prep Time: 5 mintues
Serves: about 2 cups smoothie
- 1 cup yogurt, almond milk, or coconut milk
- 1/2 cup pumpkin puree
- 1 scoop unflavored or vanilla protein powder (optional)
- 3 ice cubes
- 3 dates
- 2 Tbsp. almond butter
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
Blend everything in a blender until smooth.
Notes: If you have a "pumpkin pie spice" blend, you can do about 1 tsp of that instead of all the separate spices. Also, I almost always throw a handful of greens into my smoothies. You won't have that pretty orange color anymore, but it will give you an excellent nutritional boost.
